Q: Do I need to memorize the characteristics of foods for the examination?

A: Well, you should know the general characteristics of common foods. For example, you should know that apple juice is usually acidic with pH of about 4.0, biscuits are dry, breads are usually quite dry but can still be moldy, and so on. More important, you should familiarize yourself with what microorganisms are usually related to what foods.
